Sorbet with a rosé wine twist

Var-based ice-cream maker develops a dessert made from the popular summer apero wine

DO YOU prefer your wine by the glass, by the bottle… or by the tub?

Former Paris ice-cream maker Alain Martinez, who now lives in the Var, has developed a sorbet made from that popular summer apéro drink, rosé wine.

He told Le Figaro that the idea for the alcoholic dessert came to him during an evening, when he had an epiphany while looking at ice cubes slowly melting in a drained glass of rosé.

He discovered that the idea was unique in France, though a Canadian company made a sorbet using a grenache wine.

Six months later, after testing and refining his recipe, he and business partner Barthélémy Gaylord have launched LichBitSun. The 5% ABV sorbet is on sale in 10cl tubs in two Var supermarkets, and is also offered in a number of restaurants.
