‘Satin’ and ‘lily’ are best desserts

The country’s top prize for puddings has gone to a chef from Carcassonne and a student from Le Touquet

A CHEF from Carcassonne and a lycée student from Le Touquet have won France’s top dessert prize with “satin” and “water lily” creations.

The winners in the professional and junior sections of the Champion de France du Dessert 2013 were Rémi Touja of the restaurant Le Parc-Franck Putelat and Anne-Sophie Bercet of the Lycée Hôtelier of Le Touquet.

They were declared champions and awarded the title Dessert d’Or (golden dessert) after finals in Rennes which followed regional rounds.

Mr Touja won with his “Satin of pineapple, lime and juniper berry”, while Anne-Sophie made a “Water lily with flavours of the tropics” (pictured).

The pastry chefs were asked to make a restaurant dessert to serve 10 as well as another dessert from a basket of ingredients selected by top chef Olivier Roellinger, who was jury president.

Mr Roellinger said he was “delighted by the talent and astonished by the maturity of these young people with a passion for cooking”, adding: “What we were looking for was desserts that are simple, joyful, tasty, generous and above all sincere.”
