French recipe: Fontainebleau

Chef Camille Fourmont shares with Connexion her famous Fontainebleau recipe, out of her new recipe book.

Ingredients, serves 2-3

  • 1 cup heavy cream, chilled
  • 3 tablespoons icing sugar
  • ½ cup fromage blanc


  • In a chilled bowl with a hand-held electric mixer (or a whisk if you would like the exercise), whip the cream with the sugar until it forms soft peaks.
  • Using a rubber spatula, fold in the fromage blanc until evenly incorporated. Cover and keep in the refrigerator until serving, or serve right away.
