Dairy farmers near Le Mans found a novel way to make use of local heritage and help drain a milk surplus, with ice cream flavoured... with rillettes, the Sarthes meat paste speciality.
Patrice Riauté and wife Cathérine make Earl de Courbeton ice cream at Parcé-sur-Sarthe and said the rillettes flavour started as a joke. But they tried it and it worked as an aperitif.
