In your article 'Is it possible to get a French phone number before moving to France?’, the author wrote: "Finally, you can buy an eSIM [a digital 'embedded' SIM card] before arriving, although this is usually only a good option for travellers or infrequent visitors and not those intending to move permanently.”
This is not correct.
Before arriving in France for an extended period in March, we signed up for “hors forfait” Bouygues phone plans that cost €13.99 per month for 100GB of data and unlimited texts and calling, with no minimum contract period (it can be cancelled at any time without penalty).

We were emailed links for eSIMs, which were very easy to set up. Orange and SFR offer similar plans.
At the moment, Bouygues is offering an “hors forfait” plan for €9.99/month for 200GB.
Note that for these plans it is necessary to have a bank account with an IBAN. We have N26 accounts.
Wise also offers bank accounts with IBANs, and no doubt there are other banks that do the same.
